May has been absolutely fantastic so far and I can't wait to share my thoughts on one of my new favorites! As you all know, I love eating healthy recipes every possible time and that is not as simple as it sounds. Making new and creative alternatives to your routine actually makes healthy eating much more interesting and easy. Let's take salads. I love having salads as they make me feel light and satisfied. Sadly, I was one of those who shop for salad dressings from the condiment or baking aisle. Not anymore!! I just found Litehouse for our rescue. Litehouse offers fresh tasting, refrigerated and delicious dressings that can be found in the produce section – right next to other fresh and delicious veggies. This makes a lot of sense, right!? Why put a room temperature dressing on your delicious, crisp fresh salad? We probably didn’t give much thought to the preservatives in those bottles that kept them on the shelves for so long. Even if you use the best of the veggies and meat, salad dressings are the ones that decide if the salads are really worth eating. Real food deserves real dressings - made with real healthy ingredients, just like the dressings from Litehouse!

Summer time means salad season. Fresh veggies, delicious fruits and warm nights, spent enjoying outdoor meals with family and friends. To make your fresh meal burst with flavor, make something real, with something real: Litehouse Dressings! Find these in the refrigerated produce section, where real dressing should be. Yes! Litehouse is a leader in refrigerated salad dressings, veggie dips, sauces and fresh herbs. Now if you are new to this brand, I highly recommend you give them a try. It only took one sniff for me to fall in love with their products.

We often try variety of salads at home. this time, I would like to share our favorite Asian Chicken Salad with a twist & a delicious instant appetizer setup to surprise your guests! For this salad I made fresh teriyaki sauce at home, however you could use the one you have already. The dressing I use here is the 'Caesar Caesar' from Litehouse!

Ingredients:
Litehouse Caesar Dressing
Organic Spinach
Organic Arugula
Organic Carrots
Grilled Chicken Breasts Strips
Teriyaki Sauce
Grape tomatoes
Baby corn
Lettuce
Chopped Walnuts
  • Marinate the chicken breasts in the fresh teriyaki sauce for 20-30 minutes. I made quick, instant teriyaki sauce at home, however you could use the one you have already. 
  • Roast the grape tomatoes and baby corn with a drizzle of the same teriyaki sauce. You could chop tomatoes and baby corn, if you like it that way!
  • Roast the marinated chicken on the side as you proceed.
  • Mix spinach and arugula in a large salad bowl. Add the roasted tomatoes and baby corn to this mix, along with the freshly sliced carrots. 
  • Then comes my favorite part. Add generous amount of Litehouse Caesar dressing and mix it up with all the other ingredients. As you mix, you could add lettuce too! (Unlike myself, make sure to drain the lettuce completely).
  • Now add the roasted teriyaki glazed chicken and give it a light mix. 
  • Top it up with chopped walnuts or almonds for extra crunch. That's it!
Your delicious "Asian Chicken Salad" with a rich flavor twist is ready! The Caesar dressing has lots of garlic, parmesan flavor and just the right touch of anchovy. The teriyaki sauce in the roasted veggies and chicken gives a rich flavor. The Litehouse "Caesar Caesar" dressing compliments the flavors perfectly, making this summer salad, extremely delicious and satisfying. 

It would be unfair if I don't reveal the instant appetizer fun we had with Litehouse products, which was much like a competition between TEAM "Litehouse Home-Style Ranch" Vs TEAM "Litehouse Chunky Bleu Cheese"! Both these dips are equally fresh, homely and delicious. Needless to say, the match was a draw!! The Blue Cheese dressing has real artisan cheese chunks which is just AWESOME!
